Meet Aimee

Aimee lives in Salt Lake City, Utah with her husband and son. She loves to snow ski, cook and make delicious spice blends. Her passion, zest for life, humor and talents are inspiring and her blends are creative and tasty. I love that she sources her ingredients from many local farmers that are pure and free of contaminants.
She creates small batch, hand mixed spice blends and seasonings that can transform just about any meal into something truly delicious. With her creative blends, you are empowered to make meals that taste like you bought them in a restaurant with no toxins, artificial flavors/colors, additives or preservatives.
Cooking at home is beneficial because you always know the quality of ingredients going into your food. This is so important in our world of today were our food has hidden ingredients added that are proven to lead to all types of diseases. Lessen your toxic load and you lessen your chance of getting sick in the future. Whether you are vegetarian, paleo, gluten free, dairy free or nut free, these blends are perfect to add to anything you desire.
Since Aimee uses the purest seasonings and flavors, I am excited to announce that some of her newest creations are going to be flavored with essential oils. In the works are some rim salts with wild orange, lemon and lime essential oils in the mix. How cool is that? Since the oils that she is using are the purest on the market today, they are safe to consume too. I can’t wait to taste these delicious creations this summer!

CHICKEN SHAWARMA
3 pounds boneless, skinless chicken thighs.
3 T Aimee's Home Cookin' SNAKEPIT SHAWARMA
Fresh pitas
HUMMUS:
2 garlic cloves
2 C canned chick peas, drained, skinned & liquid reserved
2 tsp. kosher salt
1/3 C tahini
6 T freshly squeezed lemon juice (2 lemons)
2 T liquid from chick peas
8 dashes of hot sauce of choice
LEMON-HERB YOGURT SAUCE:
Lemon-herb yogurt sauce:
1 C regular Plain yogurt
1 C mayonnaise
Zest & juice of 1 lemon
1/2 tsp. garlic powder
1/2 tsp. each of minced herbs; lemon thyme, basil, oregano, chives
1/4 tsp. kosher salt & pepper
1 tsp. AHC Key West Rub
In a zip-top gallon bag, add chicken thighs and SNAKEPIT SHAWARMA Dry Rub. Let marinate at least 2 hours, up to a day. Spray cold grill with cooking spray, then bring up to temperature on medium heat. Place chicken on hot grill and cook each side 10 minutes. The chicken should look golden and a tad charred. Take off grill and let rest on cutting board 5 minutes. Chop into 1 inch cubes and set aside in large bowl, cover and refrigerate.
HUMMUS:
In a food processor fitted with steel blade, process garlic first then the rest of ingredients until hummus is coarsely pureed.
LEMON-HERB YOGURT SAUCE:
Mix well and refrigerate. Keeps 1 week in refrigerator. Yield: 2 Cups
TO ASSEMBLE:
Use fresh pitas, spread hummus on pita, place chicken cubes on hummus, top with chopped, seeded cucumber, tomatoes, and shredded lettuce. Finish with lemon-herb yogurt sauce.
Yield 6-8 servings

Growing up in a Vermont Country Inn, Aimee learned her kitchen techniques from her mother, a fantastic home cook and host who cooked up healthy comfort food for carloads of guests in the heart of New England ski country. Using fresh farm to table ingredients before it was trendy, Aimee learned how to create delicious food, and kept people coming back for more.
In 2009, Aimee and her family relocated to the Salt Lake City Valley for the love of the mountains and Alta Ski Area in particular. In soaking up Western culture she expanded her culinary range and began to develop her own unique flavors.
